Cashew Macadamia Chocolate Toffee
By tdbergThis candy is always popular in my holiday baskets. Plus it is really simple to make!
Cashew Macadamia Chocolate Toffee
Ingredients
2 cups of chocolate chips
1/2 cup of chopped cashews
1/2 cup of chopped macadamia nuts
1/2 cup of unsalted butter
1/2 cup of cane sugar
2 tablespoons of honey
In a medium size pot, combine the cashews, macadamias, butter, sugar and honey. Cook over low heat, stirring constantly, until the sugar is dissolved. Increase the heat to medium stirring constantly. Keep cooking the mixture until it becomes golden in color and starts to cling together.
Line a 9 by 9 pan with aluminum foil and grease thoroughly. Pour the chocolate chips into the pan and spread them out evenly. Pour the toffee mixture over the chocolate chips spreading it out evenly with a silicone spatula.
Place it in the refrigerator to cool. Once it is cool, break it into pieces.
