Basic Truffles

Every holiday season I bake cookies and candies to give out as gifts. One of my favorite recipes is truffles. They are elegant and can be easily adapted into a million different flavors.

Basic Truffle Recipe
Ingredients:
12 ounces of high quality chocolate
1/3 cup heavy cream
1 teaspoon real vanilla extract (or other flavoring)
Powdered sugar, baking cocoa or other topping such as sprinkles to coat

In a saucepan over medium heat, combine the chocolate and cream stirring constantly with a silicone spatula. Continue cooking until mixture is smooth and glossy.

Remove from heat and add vanilla (or other flavoring).

Pour into a bowl and refrigerate the ganache until it sets- about 2 hours.

With your hands, roll the ganache into bite size balls. Coat the outside of the balls by rolling them in the powdered sugar or baking cocoa. Refrigerate.
